While the word ‘pizzology’ is not in the dictionary, there is certainly a science to making the perfect pizza. And to craft the perfect pizza recipe, it takes intergenerational wisdom and, most importantly, love. Three friends from Naples have opened a proper Neapolitan pizza restaurant in Haymarket with the best name: Pizzologist.
The entrepreneurial trio will be serving pizza made from a traditional family recipe. Chef Carlo Bozza will be the main man running the show: with over decade’s experience, Carlo has finally achieved his dream and finally started his own pizza restaurant. Apparently, Pizzologist will be the place for ‘dough acrobatics’, another art form that is not in the dictionary, but we are into it. Guests will be able to watch Carlo as he spins the pizza dough in the air and magically transforms it into pizza. Ta-da!
When asked about Pizzologist, Carlo states, “Baking pizza is my passion, and I have wanted to start my own business for a long time and encouraged my friends to join me. When the pandemic hit, we watched many businesses close across Scotland, but it didn’t discourage us. Instead, we focused on the upsides of starting a business when others might hesitate and, after some research, we came across a suitable venue and decided to seize the opportunity.”
The venue itself used to be a pizza place, so they hit the jackpot on this one. “We were immediately attracted to this excellent location. It used to be a pizza restaurant, so much of the equipment was already here and we could focus on the recipes and colourful menu straight away.”
We love to see people succeed, especially when there is pizza involved. Nothing beats the deep-rooted love of food, and, even better, when the said food is shared with the local community. That is something that is never going to change within the industry.
